Our Bread Knife
Good bread does not require many tools, but the few that are used should work properly. We prefer simple, durable equipment over decorative or specialized gadgets. Cutting sourdough bread is different from cutting soft bread. The crust resists while the inside is delicate, so the knife must separate rather than press. The aim is a clean slice: the crust breaks gently while the interior stays open. Weight, balance and rigidity matter more than appearance because they affect control with every cut. A longer blade allows a full slicing motion, while correct weight distribution keeps the cut straight without forcing pressure onto the crumb. Our 9" blade is made from German stainless steel 1.4116 (X50CrMoV15), hardened to approximately 55–57 HRC — a balance chosen for stability, corrosion resistance and long-lasting serrations in everyday use. Our bread knife uses scalloped serrations that are ground into the blade instead of stamped. This is uncommon in many kitchen knives but allows the blade to glide through crust rather than tear it, keeping the crumb open and the teeth effective for many years. For this reason we deliberately chose a well-treated single steel rather than decorative layered steels.Multi-layer or so-called Damascus steel is often valued for appearance, but it does not improve how a serrated knife cuts bread and can require more care in humid kitchens. The same knife also works for focaccia, where the softer crumb benefits from the same controlled cut. We use this knife during our bake days in Singapore for cutting our sourdough bread and focaccia. It is the same sourdough bread knife we make available through our bakery for everyday kitchen use. Under normal use, sharpening is rarely required and the edge typically remains effective for many years — often 5–10 years with proper care.
